One very big tradition in Todi was Mario's peach iced tea - very much homemade and so tasty - when the peaches are starting to show in the market in late June and the temperature is getting in the high twenties - then you could always count on a glass of cooling iced tea at the counter.
Well now the season is just right - so we thought we would do this little tribute to Mario, his great little bar "Latteria" and the famous iced tea.
Very often we make it with peach - but if there are no peaches in the kitchen - it is also very tasty with orange and mint - feel free to add any fruits and herbs.
Makes about 4 big glasses 1 big pot of hot black tea 1 tbsp sugar 1 peach, cut into big dices - or an orange Juice of 1 lemon few sprigs of mint or verbena ice cubes slices of peach to serve | Pour the tea into a container - we use a large Kilner jar - makes it easy to store the tea later. Add the sugar - and stir to dissolve. Now add the diced peach and the lemon juice and give it a stir. You can adda few sprigs of fresh herbs for extra flavor. Place in the fridge overnight - next day - strain it into a new container and keep cool. Fill a large tumbler with ice, place a few slices of peach and a sprig or 2 of mint or verbena and pour in the iced tea...... A perfect way to beat the heat...... |
